Decription: The beauty of single origin has escaped us in our first year of making coffee. Yes, coffee blending is a fun way to deliver precise flavor profiles and is an art in and of itself. And yet the linear quality of a single lot is the product of only the earth in which is grows, the bugs that ferment it and the roaster deft touch. We aim to highlight that with Impermanence.
We visited Andrés back in June 2024 to explore fermentation processes on his farm. We picked beans and found ourselves walking over a wide variety of unique fallen fruits, scattered among the estate. We tasted them, one by one, and recognized their flavors often paralleled that of his beans. The ability to ferment these in tandem brings out a beautiful melange of flavor. This coffee was picked alongside semi-ripe cherries and fermented for 4 days using a mixture of honey and water. After that, the coffee was dried in sun bed driers for 6 to 12 days and finished in mechanical dryers. The result is milk chocolate, filled with cranberries and carbonic red wine grapes.
